I don’t know about you, but I sometimes find my Mondays lacking a little cheer and excitement. My new recipe has me so thrilled that I am sharing my Tasteful Tuesday post a day early!! I’m sharing this delicious oatmeal recipe with my sweet homemaking friends over at Raising Homemakers.
Growing up, I was never a fan of oatmeal. I am a grits eating, southern belle. Then I married my sweet husband, who has northern roots. He has always loved maple brown sugar oatmeal. Between his influence and Trim Healthy Mama, I have learned to like oatmeal. In fact, oats have many health benefits especially if they are soaked overnight.
With autumn quickly approaching, I have been craving some of those hot, fall comfort foods. I was enjoying a cup of coffee with a precious friend of mine the other day. She mentioned she had made a nice bowl of peaches and cream oatmeal. I thought it was interesting that I had made some earlier that week as well. It happens often that we think alike, which makes me smile. Good friends are such a blessing! I thought it would be a good idea to share this oatmeal recipe with you, my homemaking friends.
Peaches and Cream Overnight Oatmeal
1/2 cup water
3/4 cup almond milk
1/3 cup gluten free oats
1/2 tsp pure vanilla or almond extract
1 small peach
2 tsp Sweet Blend natural sweetener or 2 scoops Stevia
1/2 tsp cinnamon
1/8 tsp nutmeg
pinch salt
1/8 tsp glucomannan (natural plant based thickener that promotes healthy cholesterol and regularity)
1-2 tbsp nonfat Greek Yogurt (for creaminess and extra protein)
This recipe makes one good-sized portion, but can easily be doubled or tripled. It is gluten free and low fat.
Pour liquid and oats into a medium microwave-safe bowl. Chop peach and add to same bowl. Add your choice of sweetener and extract, and the cinnamon, nutmeg, and glucomannan. Stir well. Microwave on high for about 2 1/2 or 3 minutes. Allow to stand in microwave for another couple of minutes. Refrigerate overnight. In the morning, warm up oats in microwave for a few minutes (microwaves may vary) until thoroughly warmed. Add dollop of nonfat greek yogurt and then a tiny sprinkle of nutmeg and sweet blend on top of the yogurt. (You could easily substitute the peach for an apple, 1/3 cup of blackberries or blueberries, or 1/4 cup of pure pumpkin puree.)
This is a deliciously decadent bowl of warm, comforting oatmeal to enjoy on a brisk fall day. I think I’ll make some to enjoy while I curl up in a chair on my back porch tomorrow morning. I just adore everything about fall, the cool weather, the scents, the food, and the time with precious friends!
