When we discovered my oldest daughter had a gluten allergy, it was tough. We love sweets, baking, spending time in the kitchen as a family, and of course eating! It took a lot of time, trial and error to perfect baked goods to her gluten free lifestyle. I’ve been able to tweak many of our recipes to make them gluten free. One recipe I had trouble with was cookie dough recipes. I couldn’t seem to get the gluten free flour ratios just right at times. Anyway, I came across a gluten free cookie dough truffle recipe on Pinterest that was perfect. My children chose these truffles as one of the desserts we would take this weekend for our church Memorial Day picnic. Even though they are gluten free they really aren’t healthiest dessert for my family. I have removed refined and bleached sugar from our home, but I just haven’t been able to get my family completely off of all sugars. It is a good occasional treat for holidays and special events.
I was feeling a little deprived, because I really like them too but they aren’t on the THM plan. I have to say that I generally don’t feel deprived on the THM plan, because there is usually a healthy alternative to most recipes. I recalled that a few weeks ago I saw Meadow’s Coconut Lemon Truffle recipe on the THM Facebook page, and I immediately made a batch. They were really very good. I made a batch of the coconut truffles this weekend, but I made her key lime variation this time and it was scrumptious.
Then I decided, wouldn’t it be awesome to have my own chocolate chip cookie dough truffle recipe. I spent a little extra time in the kitchen this weekend and came up with a delicious THM recipe for them. I’m so excited to share it with you!!!
Chocolate Chip Cookie Dough Truffles Recipe –
THM Friendly (S)(adapted from Meadow’s Coconut Lemon Truffle recipe)
3 oz cream cheese
2 T coconut flour
1/3 c Gwen’s Nest Just Like Brown Sugar recipe (Xylitol mixed with molasses)
2 T Butter
1 TB extra virgin coconut oil
Dash of vanilla
1-2 pinches of salt to taste
Skinny Chocolate recipe from Trim Healthy Mama or Trim Healthy Chocolate Chips (sugar and soy free)
Directions: After making the Just Like Brown Sugar, grind it in the coffee grinder to make it a little finer. Chop a few pieces of skinny chocolate into chunks or use chocolate chips. Cream the cream cheese, butter, coconut oil and brown sugar. Add remaining ingredients and mix well. Scoop about 1 to 1.5 tsp of the mixture and roll between your palms little balls and place on parchment or wax paper.
Freeze until firm. Melt a few pieces of skinny chocolate. Roll truffles in melted chocolate and return to parchment or wax paper. Chocolate will begin to harden quickly. Roll truffles one more time to get a second, thicker coating of chocolate. Store in fridge or freezer.
You’ll notice from my picture that the cookie dough truffles aren’t nearly as “round” as the key lime (I was in a hurry), but that didn’t affect the taste. They were DELICIOUS! Gotta go. Time to raid the fridge for these truffles!
