Strawberry Spinach Salad (THM S)

¼ cup chopped red onion
½ medium cucumber, chopped
½ lb quartered or sliced strawberries
¼ cup slivered almonds
6oz bag baby spinach
Crumbled feta cheese
Dressing
1 lemon
2 tbsp apple cider vinegar
6 doonks stevia (a doonk is 1/32 scoop that comes with stevia)
1 tbsp olive oil
1 tsp poppy seeds
In a small bowl, zest lemon (about ½ tsp) and squeeze 2 tbsp lemon juice, add remaining dressing ingredients and whisk well. Put spinach in a bowl with onion, cucumber, strawberries, and almonds. Sprinkle with feta cheese. Drizzle with dressing and toss. If serving this as a side salad, you will probably be able to get about ten servings out of it. However, I wouldn’t be surprised if it didn’t go that far. It is beautiful and delicious. I know I can’t eat it as a side. I usually put a huge pile on my plate! Enjoy!
