Y’all, my sweet grandmama used to make these all of the time. They were my favorite dessert growing up. Of course, these delicious bars do not fit into my THM lifestyle. SO I had to come up with a way to tweak them.
“THMifying” old recipes is one of my favorite pastimes! I love taking those old favorites and making them fit into my healthier, leaner life!
So…. here is this amazing recipe in THM fashion:
Part 1 THM Condensed Milk
1 13.5 can coconut milk (full fat)
2 tbsp super sweet blend
1 tsp molasses
Put all ingredients into a shallow pan like a skillet or frying pan. Bring to a boil (watch it carefully), simmer, and stir periodically. It should take around 25-30 minutes to condense the milk. It will be a golden brown consistency and thick like sweetened condensed milk. Allow cooling at room temp.
While all of that yummy goodness is going on you can begin on the crust of the bars.
Part 2 Crust
1 cup almond meal
2 tbsp super sweet blend
1/4 cup coconut oil, melted
Mix all ingredients and spread into an 11-inch rectangle pan. Press down into a crust. Bake on 325 for 15 minutes until golden brown. Allow cooling at room temperature.
Part 3 Bars
It’s time for the good stuff!
1 cup Lily’s chocolate chips
1 cup Lily’s butterscotch chips
1 cup unsweetened coconut
2 cups chopped pecans
Sprinkle an even layer of coconut on top of the crust. Then drizzle the sweetened condensed milk over the coconut covering the area as much as possible. Sprinkle the chocolate and butterscotch and then pecans on top. Bake in the oven at 325 degrees for approximately 30 minutes. Cool completely. Then cut into 12 squares.
I would tell you to enjoy them, but that’s a no-brainer! There’s no way you won’t. They are amazing!
